My husband, Lindsey regularly attends a Dad’s Bible study and this past week, we invited over one of the dads and his family.
What a treat to be able to visit with another family who’s passions are God, family and farm!
They have a small, entirely grassfed, A2A2, dairy herd of (right now) 9 cows. And they brought us a treat of 1 gallon of that milk!
A2A2 is a genetic trait that makes milk easier to digest. Sometimes folks who can’t drink conventional cow’s milk can tolerate A2A2 cow’s milk. Goats produce A2A2 milk, which is why some find it easier to drink. I learned this from the Schmitz’s!
I can’t remember if I’ve ever had milk from entirely grassfed cows (generally cows are given some kind of grain to help boost milk production) and it was interesting the difference in flavor that the milk had. Yum! What a treat.
I used the milk to make a cream sauce to go with chicken and pasta.
Here’s what I did:
1. I diced up chicken and cooked it in a kettle with lard, a sizable amount of granulated garlic and some salt.
2. When chicken was completely cooked, I stirred in enough flour to completely cover the chicken.
3. Next, I stirred in about 2 cups of milk.
4. I continued stirring until thick, then added about 1-2 more cups of milk.
5. I stirred, added milk and stirred some more until I had the amount of sauce that I wanted.
6. I had cooked the noodles and put them into a large bowl, then added the sauce and stirred together.
Everyone loved it!
*A couple notes:
– Stir WELL and across the bottom of the pot to keep from sticking/burning.
– At one point, the milk was bubbly but not really thickening, so I put more flour and milk together in a mason jar with a lid, shook vigorously, then added to the sauce. This helped thicken it well!
– As with a lot of supper/dinner meals I make, I don’t generally measure things out. But for you to imagine if you want to make this yourself, I started with about 2lbs of chicken breast, added maybe 2-3 cups of flour total, a gallon of milk and 3 lbs of elbow macaroni. That made A LOT and a little heavy on the noodles. It would have been better to add another pound of chicken or 1lb less of noodles.
