Ordering your cuts of pork

There are a lot of details when it comes to ordering the cuts of meat and it can be overwelming. Let us help you out!

A pig is divided into 4 main sections calls Primal Cuts.

Take a look at the picture above. You can see the hog is divided into these 4 sections – shoulder, loin, leg and belly.

You don’t receive just these sent home to you. They will take each section and cut it into much smaller pieces that you will be able to cook the way you want. (The entire pork shoulder would never fit into your oven…)

If you ordered a half hog, you will get one side of the hog, therefore half of each primal.

Primal Cut: Shoulder

The shoulder is a primal cut that consists of the front leg of a hog. The shoulder is usually processed into two main cuts: Butt Roast and Picnic Shoulder. You have some options for both of those cuts.

Butt Roast*

The butt roast is the upper part of the leg. Some common names for the butt roast are: Boston shoulder, pork butt, and Boston butt. It's a flavorful, well-marbled cut that is often slow-roasted and shredded. Since this cut can be difficult to slice for servings, some customers simply choose to have the butt roast meat processed into ground pork. Another option for the butt roast is to have it sliced into steaks, which can be prepared in a variety of ways.

Picnic Shoulder*

The picnic shoulder is the lower part of the front leg. Some common names for the picnic shoulder are: shoulder arm picnic, fresh picnic, picnic roast, or picnic ham. Like the butt roast, the picnic shoulder is flavorful and well-marbled but can be difficult to slice when prepared as a roast. Some customers simply choose to have the picnic shoulder ground.

Primal Cut: Loin

The loin primal cut is the long muscle along the back of a hog. You can decide if you want this primal cut processed into bone-in pork chops OR boneless pork chops, with the baby back ribs and tenderloin separately packaged.

Primal Cut: Side/Belly

Here's where you can get your bacon or side pork and spare ribs.

Side/belly*

Side/belly comes sliced, smoked and cured as bacon, just sliced as side pork, or in a do-it-yourself option as a whole belly to smoke/slice as you'd like. *At this time there is no natural curing alternative for bacon - it will contain nitrites/nitrates.

I want side pork sliced (looks like bacon, but not cured or smoked; tastes like a thin pork chop)

I want the whole uncured pork belly and I will cut or smoke or whatever I want to process it.

Spare ribs*

Spare ribs can be prepared in a variety of BBQ styles on the grill or in the oven. If you're more excited about having as much ground pork as possible, opt to have the spare ribs included in your ground pork.

Primal cut: Leg

The rear leg of a hog is used to make a ham. You can choose between a fresh ham or a ham that has been cured and smoked. *At this time, there is no natural curing alternative for ham. The ham will be smoked and cured using nitrites/nitrates.

I want my ham smoked and cured and cut into roasts (tastes like a traditional ham)

Ground Pork

Any meat that is not part of a cut and is trimmed from the bones will be ground with a small amount of fat. Ground pork can be seasoned or unseasoned in bulk packages, made into seasoned breakfast sausages, or brats (options vary depending on size of pick and half/whole).

Fat

The fat can be used in baking or to replace almost any oil/butter in cooking. You can have it ground or not. Grinding it makes it much easier to work with if you would like to render it. There is a grinding fee. Whole slabs can be rendered as well, or fed to birds or dogs/cats outside in the wintertime.

Other cuts

Hocks*

Hocks are the lower part of the legs/feet. They are best cooked low and slow...a crock pot or a smoker would be a great way to do this.

Fresh, uncured hocks

Smoked and cured hocks (like ham/bacon)

Include hocks in ground meat

I don't want the hocks, add any meat to the ground.

Bones*

You can use the bones to make delicious soups and broths.

Include all the bones in one package. (This package may be large and difficult to store in a freezer.)

Include all the bones in multiple, smaller packages.

Do not include bones in my order, other than the bones that may be left in some cuts of pork.

If you are ordering a whole hog, you can choose to include the organs in your order. If you are ordering a half hog, you can request the organs and some or all of them may be available, depending on how the order for the other half has been entered. You can select multiple options for this one.
