The days are getting shorter, aren’t they?
The grasses aren’t a green and the air is definitely cooler!
While sometimes we don’t enjoy the typically never-ending Minnesota winter, in our family, we look forward to a slower time.
No grass to mow.
No lawn mowers to fix.
No weeds.
No bugs!
Instead, we typically spend evenings reading or talking or making popcorn or planning ahead for the next season. It’s a lovely time of it’s own!
But before all these come, we are scurrying around finishing up all the summer/fall projects and activities!
This past weekend we separated the little feeder pigs from their mothers. They do pretty well with this and mothers especially enjoy the ability to lay down and relax in the warm sunshine without being overwhelmed with little mouths who think they are DYING OF STARVATION…AGAIN. haha!
I roped off an area by the barn and we let out the newest layer hens. They had a grand time out in the sunshine!
The ropes are up to keep the pigs OUT….not the chickens in. 😉
A neighbor dropped by with the skidloader scoop full of mushy pumpkins. The boys used fence posts to skewer them and fling them over the fence.
The sows thought they were tasty!
Did you see the northern lights last week?
I’m SO not a night owl, so generally, even though I would LOVE to see them, sitting outside at 2am is not something I want to do.
So last week when it was 7pm and the lights were out, yeah! I got to see them for once.
Here’s a fun picture of Lindsey and 4 of our kids.
My phone made the reds MUCH darker than they were, but I still like the picture. 🙂
What’s in the farm kitchen this week
Last week, I promised some recipes for leftover turkey.
There are many, but I made these 2.5 and they were a hit. 🙂
1…..Turkey Soup
The other day I put some turkey pieces in the roaster with water and then pulled the meat off, saved the broth, and made a turkey and potato gravy.
Actually, it didn’t thicken as well as I wanted, so it ended up being soup, but it was still SO GOOD.
In the soup were onions and potatoes from our garden, turkey from Anna, and also, along side the soup, steamed squash from my mom’s garden.
Locally grown tastes really awesome!
2…..Turkey Salad Sandwiches
I didn’t use up all the turkey in the soup, so I also made turkey salad sandwiches.
This is just like the chicken salad sandwiches I’ve often mentioned, except with turkey. Cut up onions and celery with mayo, salt and pepper.
Delicious!
And recipe .5…..Turkey Salad Wraps
Same salad recipe as above, but with lettuce and more raw onions in a wrap. That counts as another recipe, right? 😉
Bible inspiration this week
Wishing you and your family and friends a blessed Thanksgiving next week!
Give thanks to the Lord, for he is good.
For his mercy endures forever.Psalm 136:1
Encouraging you pause and take time to thank Him for all the blessings he gives you each and every day.
